| Sous Chef, Horse & Plow Location:Kohler, WI Opportunity Our team at The Horse & Plow offers a unique pub-style menu in a space that channels its 1924 origins as a recreation center and taproom for Kohler Co. workers. The Sous Chef at Horse & Plow will be responsible for: - Standardizing recipes, plating instructions and menu costs.
- Monitoring freshness and inspect food products daily to uphold quality standards of the resort.
- Creating specials and work with management to execute special events and marketing opportunities.
- Staying current with hotel and culinary trends to provide innovative menu ideas.
- Demonstrating a thorough knowledge of food handling and preparation techniques.
- Storing, rotating and labeling food items while maintaining a well sanitized kitchen in accordance with health regulations.
- Actively supporting the company’s mission by consistently providing world-class products and service to our guests.
- Maintaining a positive attitude and assist in creating a positive work environment.
- Working closely with purchasing to stay current on new products that can improve quality and/or lower costs.
- Providing training, tools and materials for your associates to successfully complete assigned tasks.
Skills/Requirements - Experience in budgeting, food cost, labor costs, and scheduling
- Thorough knowledge of food handling and preparation techniques
- Skilled in inventory control
- Food Manager Certification required or completion of this certificate within six months of employment.
- A graduate of a culinary institute with an associate degree highly desired or completion of equivalent apprenticeship program, certified through the American Culinary Federation.
