Job Description Summary
The Principal Microbiologist, Applied Research, Food Protection is part of the Food Protection team that is a key component of the food safety and microbiology program at Lamb Weston. Support management and Lamb Weston facilities in the implementation of relevant food safety processes and procedures and the daily execution of related activities and will participate on cross functional teams to ensure effective implementation of various quality, food safety (microbiology) and innovation initiatives and processes.
Job Description
- Champion a culture mindset of food safety first and foremost both horizontally and vertically across the Lamb Weston
- Ensure the adoption of best food safety practices across the organization including pathogen environmental monitoring programs, food safety sampling and testing regimens, and leading-edge methods deployment.
- Conduct portfolio risk assessments and recommend risk mitigation strategies and approaches.
- Respond to food safety-related special situations and provides guidance and direction to the process failures such as hygienic restoration and finished product micro disposition.
- Collaborate with key stakeholders such as Procurement, Co-pack Quality and others to ensure Lamb Weston’s food safety standards are rigorously adhered to across the Global Supply Chain.
- Support Supplier compliance on microbiology related issues and audits of high-risk commodities
- Leads coordination of external laboratory services for analyses and data reporting
- Provide manufacturing support, including advising Corporate Quality and plant personnel on:
- Validation of processes and equipment for microbiological effectiveness
- Investigation and completion of appropriate corrective actions when pathogens are identified in the EMP programs or after hygienic restoration events
- Microbiological food safety risk assessments and recommendations
Scope: The Principal Microbiologist, Applied Research, Food Protection interfaces with Lamb Weston manufacturing facilities as well as other departments and functions including Research and Innovation, Quality, Engineering, Process Development, Training, Customer Relations, Legal and Safety, and Operations.
Basic & Preferred Qualifications
- Required B.S. in Microbiology, Food Science or related field with 7 years progressive food safety experience, or
- M.S. in Microbiology, Food Science or related field with 5 years progressive food safety experience preferred or
- Ph.D in Microbiology, Food Science or related field strongly preferred with 2 years progressive food safety experience
- FSMA PCQI certified
Skills and Experience:
- Demonstrable knowledge of HACCP/Food Safety plans and related food safety systems as applied at the food manufacturing plant level.
- GFSI certifications/knowledge
- Outstanding interpersonal and communication skills (written and verbal).
- Strong technical leadership with an understanding of business needs and processes.
- Demonstrated external leadership with a record of accomplishment relative to food safety via trade associations, academic consortia, and in the regulatory arena.
- Experience with government regulations (FDA/USDA/CDC/State and Local as well as international).
- Understanding of ICMSF publications.
- Track record of successfully managing cross-functional teams and technical teams in the area of food safety.
- Excellent report writing skills.
- Working knowledge of statistical and analytical tools.
- Ability to travel up to 50% of the time.
Physical Environment/Demands:
- Incumbent must have the ability to effectively perform all of the following physical demands without assistance:
- Stand, sit, and/or walk for up to 8 hours a day.
- Drive company or rental vehicle for up to 6 hours in a day, infrequently.
- Occasionally will work in plant settings.
- Use of lab equipment and tools.
- Lift up to 25 lbs. occasionally and up to 50 lbs. infrequently.
- Valid Driver’s License and driving record that meets Lamb Weston Driving Standards
- May have to sample food while evaluating Lamb Weston products
- Climbing to various heights via stairs or ladders on a regular basis

This compensation is specific to this position and takes into account a number of variables. Actual compensation may be higher or lower in the range posted based on various factors, including, but not limited to, job duties, experience and expertise. A candidate’s work location could also impact the actual compensation being outside of the range to reflect local cost of labor. A reasonable annual estimate of the range for this role based on the variables previously mentioned is: $107,390.00 – $161,090.00
