POSITION OVERVIEW
The Kitchen Supervisor (KS) is responsible for supporting the Kitchen Manager in the operation of the kitchen and the food program at the Harpoon Beer Hall (HBH).
CANDIDATE PROFILE
The candidate must be a team player with demonstrated success as a supervisor, and be able to execute routine, high volume production (primarily pretzel baking) as well provide culinary creativity for menu specials. Strong organizational skills and a passion for hospitality are essential for this position. As employee-owners, Harpoon team members wear many hats and do whatever it takes to contribute to the overall success of the operation.
RESPONSIBILITIES
Supervision of Staff
- Overseeing staff during specific shifts
- Support in the recruiting, hiring and onboarding process of the kitchen staff
- Assist in the training of back of house team members, with specific focus on kitchen SOPs, customer service, and food safety
- Routine meetings individuals and team
- Key member in providing on-going evaluation and periodic performance reviews
- Hands-on coaching, and guidance to ensure compliance with all SOPs and standards
- Maintaining the professional appearance of all kitchen staff
Culinary Management
- Developing and implementing weekly and seasonal menu specials
- Developing written checklists and standard operating procedures to ensure consistency of operations.
- Maintaining professional relationships with all coworkers, ensuring that the front and back of house teams are working together seamlessly
- Kitchen equipment cleaning, maintenance, and repair
- Coordinating kitchen operations with third-party caterers and private events team
- Manage pretzel orders-to-go and special needs for festivals
Administration
- Maintain the daily production schedule (including private events) and communicate any changes to the Kitchen Manager/GM/MOD
- Vendor Management:
- Purchasing
- Receiving (including recording invoices and credits)
- Quality control
- Inventory management
- Ensure TOAST POS is updated for any new items
- Opening or closing the kitchen as needed
Quality, Health, and Safety
- Maintaining ServSafe certification for self and all kitchen staff
- Maintaining a safe, clean and organized kitchen
- Routine daily and spontaneous quality control checks
- Compliance with all local and state health and safety requirements
WORKING CONDITIONS
- Variable hours that include night, weekend, and holiday work
- Position requires prolonged standing, bending, stooping, twisting, lifting products and supplies weighing up to 65 pounds
- Work with hot, cold, and hazardous equipment
EXPERIENCE/SKILLS:
- 2+ years professional kitchen/restaurant management experience
- Highly organized and energetic
- Hands-on approach
- A passion for engaging guests with food and dining experiences
- Genuine enthusiasm for craft beer and craft beer drinkers
