Specific responsibilities include: - Responsible for managing all food and beverage operations for Lodge Kohler in accordance with company standards
- Responsible for meeting projected targets for sales, profits and expenses while achieving excellent levels of customer satisfaction and associate engagement
- Ensure areas rated by AAA achieve Four Diamond service and quality standards
- Takes a lead role in the training, integrating, and establishment of performance expectations
- Provides overall direction, coordination, and evaluation of outlet personnel
- Establishes performance expectations, regularly appraises performance against expectations, and provides ongoing feedback, reward, and redirection
- When necessary addresses performance issues and complaints and devises a plan of action to resolve the issues
- Confers with the outlet chef to formulate ideas, concepts, cost, and marketing of all menus
- Develop financial, capital, and manpower plans with department managers; Responsible for creating a gracious dining experience four all guests who enter the property
- Maintain awareness of industry trends and competitive set to stay ahead of the competition
- Engage with Titletown development to create specials that compliment programming and entice guests into Lodge Kohler Food and Beverage venues
Food & Beverage location hours of operation are as follows: - Leaps and Bounds Cafe – 6:30am – 6:00pm
- Taverne in the Sky – 11:00am – 11:00pm
Skills/Requirements - Bachelor’s degree and culinary degree or certificate preferred
- Ability to understand and positively impact P&L statements, cost of sales, food costs, inventory control, and safety performance necessary
- Capable of effectively managing both front and back of house operations; as a result, strong interpersonal and leadership skills are essential
- Food Manager Certification and Liquor License required or completion of this certificate within first six months of employment
- 3-5 years leadership experience in both front and back of house with similar restaurant dynamics preferred
